This is one of our family favorites. It’s easy to prepare and so delicious!! We like to make this with roasted potatoes in the same pan, however, it can also be prepared by itself and then served with spaghetti, salad and Italian bread on the side. Mangia!
CHICKEN CACCIATORE WITH ROASTED POTATOES
2 lbs Chicken parts or Boneless Chicken Breasts
3-4 med Potatoes, quartered
1/4 cup Olive oil
1 med Onion, diced
1 Green Pepper, diced
2 Cloves chopped Garlic
2 small cans Tomato Sauce
Salt & Pepper to taste
Dash Garlic powder
Dash Oregano
1/3 cup White Wine or Sherry
Season chicken and potatoes with a little salt, pepper and garlic powder to taste and place in large roasting pan.
Saute onion, green pepper and chopped garlic in olive oil over med heat about 4-5 minutes. Add tomato sauce and blend. Season with salt, pepper, garlic powder and oregano to taste. Pour over the chicken and potatoes. Pour white or sherry wine over all. Cover with Silver Foil and bake at 375 for 45 minutes. Uncover, and continue baking until tinged brown or brown under the broiler for a few minutes. ENJOY!!!!
