Let EM Bowl You Over!
Summer’s here and its hot. On the menu – Hydration and Light Fare. No one wants to feel full and hot. EM has the perfect summer meals! Delicious and easy to prepare BOWLS. Try these three bowls that are sure to please your pallet, fill you up and leave you perfectly satisfied. Come on Let EM Bowl you over!
Chicken Rice & Guacamole Bowl
Ingredients:
4 Chicken thighs
Jasmine Rice
1 cup Diced Tomatoes
Scallions
Soy Sauce
Garlic Cloves
Cilantro
Extra Virgin Olive Oil
1 White Onion
2 avocados
Step 1. Heat Olive Oil in skillet on stove top (medium heat).
Step 2. Add 1 Garlic Clove (diced and crushed) and ½ cup onions to medium low heat. Sautee for 3-4 minutes.
*Use more garlic if you like. EM loves garlic too!
Step 3. Cook Chicken thighs until done. Brush chicken with Soy Sauce. Simmer ten more minutes turning chicken every few minutes. Remove from heat.
Step 4. Blister ½ cup of diced tomatoes
Step 5. Cook Rice as per instructions
GUACAMOLE SAUCE:
1 Avocado
1 Garlic clove chopped
3 tblspoons Olive Oil
Salt & Pepper
Cilantro
Step 1. Cut Avocado and separate avocado from peel.
Step 2. Place Avocado in blender
Step 3. Add all other ingredients
Step 4. Pulse until thickened
Arrange Rice in Bowl. Add Soy Sauce to your taste. Add uncooked diced tomatoes, scallions and cilantro. Place chicken, sliced, on top of rice. Place Guacamole on Side. Squeeze a little lime on top if you like. Enjoy!!!!!
Shrimp Lover’s Delight
Ingredients:
Shrimp
2 Tomatoes(diced)
2 Garlic cloves
1/2 Onion
Salt
Pepper
Olive Oil
1/2 cup Scallions(diced)
1/4 cup Parsley
Cilantro
Rice(use your favorite) we used white)
Lime
Recipe:
Step 1. Braise Tomatoes and season with a sprinkle of salt and pepper (not much)
Step 2. Chop Garlic Gloves
Step 3. Olive Oil. Combine in saucepan with Garlic, celery, and onions
Step 4. Cook Rice according to Directions
Step 5. Layer on top of rice
GUACAMOLE:
1 Avocado
1 Garlic clove chopped
3 tblspoons Olive Oil
Salt & Pepper
Cilantro
Step 1. Cut Avocado and separate avocado from peel.
Step 2. Place Avocado in blender
Step 3. Add all other ingredients
Step 4. Pulse until thickened
SHRIMP:
Sautee shrimp in butter and fresh garlic. Place shrimp on top of dish or layer around the sides. Garnish with diced tomatoes, scallions, parsley.
Rice Noodles Veggie Bowl (noodles)
Ingredients:
Rice Noodles
Green Peppers
Red Peppers
Yellow Peppers
Tomatoes diced
Scallions (chopped)
2 cloves Fresh Garlic chopped and crushed
Vegetable Broth
Peppers:
Preheat oven to 350
Slice green, red and yellow Peppers
Roast until peppers are soft and outside of peppers are slightly brown
Rice Noodles:
Bring water to boil. Place noodles in water. Boil for 3-4 minutes. Drain
Broth:
Bring Vegetable Broth to a boil. Add Worchestshire Sauce and crushed garlic. Lower heat and simmer.
Prepare Bowl: Pour Broth into bowl. Add Rice Noodles, Peppers, Chopped Scallions and Parsley.
***Try sautéed spinach with this recipe. Tastes great!
