This delicious and healthy recipe was quickly made and presented during the 2015 Authenticity Professional Women’s Retreat. The flavors are distinct and has a very fresh taste. There were so many women asking me to share this recipe.
Black Bean, Corn & Edamame Salad
- 1 can black beans
- 1/2 cup frozen corn
- 1/2 cup frozen shelled edamame
- 1/4 cup diced sweet onion
- 1/2 cup chopped celery
- 1/2 cup chopped cilantro
- 3/4 tsp cumin
- 1/4 tsp salt
*Combine all ingredients in a large bowl and gently stir. The frozen corn and edamame gives the salad a quick chill and only takes approximately 15 minutes to thaw.
*Prepare salad dressing below and gently mix through to coat the ingredients to your liking. I used about 1/4 cup of dressing. Lime Vinaigrette Dressing
- 1/4 cup fresh lime juice
- 1/2 cup olive oil
- 3 cloves crushed fresh garlic
- 1 tsp salt
- 1/8 tsp ground black pepper
- 1/4 tsp cumin
*Mix ingredients in a bottle and shake well before serving. Refrigerate any remaining dressing and salad.
*Makes 4-6 Servings* Fresh Avocado sliced on top would highly compliment this side dish as well.
* Serve with fresh celery sticks or Tostito chips
