VEGAN GREEK SALAD with TOFU FETA

Jamaican-born Sandi Morais is a graduate of Florida International University. She also attended Le Cordon Bleu College of Culinary Arts. Chef Sandi is the author of Vegan Recipe for Life cook book, and the Brand Ambassador for Stifinefood Italian Vegan Products. She studied Food Design with Chef Johnny Rivers, and the Science of Food with Raw Food Guru, Dr. Aris LaTham.
Chef Sandi was the VIP Chef for the 2018 Orlando Vegan Festival. She has prepared some of her tasty meals for numerous celebrities, and demonstrated some of her meals at the Jamaican Jerk Festival in Fort Lauderdale, Taste of Haiti Food Festival, The Tupperware, and Central Florida Fair. Chef Sandi offers classes to those interested in embracing the Vegan Lifestyle.

Ingredients
Salad Recipe
4-5 cups organic romaine lettuce (chopped)
2 tablespoons olive oil
2 tablespoons Bragg Apple Cider Vinegar
1/2 cup cherry tomatoes (sliced)
1/4 cup capers
1 tablespoon fresh lemon juice
1/4 small green bell pepper (sliced)
1/2 cup pitted Kalamata olives (sliced)
1/4 English cucumber (sliced)
Tofu Feta Recipe
1 pack organic Non-GMO firm tofu
1/4 teaspoon dried dill
1/4 teaspoon dried basil
1/4 teaspoon garlic powder
1 teaspoon olive oil
Sea Salt
Method:
Step 1. Take the tofu from the package and wash it off. Put the tofu into a steamer with some water and steam for about 20-25 minutes.
Step 2. Once the tofu is steamed run some cold water over the tofu; cut tofu into chunks and put the chunks into a food processor or chopper. Add dill, basil, garlic powder and olive oil. Pulse until tofu begins to crumble. Salt to taste. Set Tofu Feta aside.
Step 3. Wash romaine lettuce and put the lettuce into a bowl. Add cucumbers, peppers, tomatoes, olives and capers. Put olive oil, lemon juice and apple cider vinegar into a small bowl and mix. Pour thedressing over the salad and add Tofu Feta.
